2 1/2 # pork roast
1 clove garlic, chopped
1 tsp cardamom
1/4 tsp ginger
salt and pepper
20 oz pineapple juice
2 bay leaves

Directions:
Directions:
Cut slits in roast. combine garlic, cardamom, ginger, salt and pepper. Rub into slits. Put pineapple juice into pan. Place roast in pineapple juice. Place bay leaves on top of roast. Cover and simmer on top of stove for 20 minutes. Turn over and place in 350 degree over for 1 hour.
Turn over and cook for 1 hour more
Gravy:
1 oz rum and 1 t. corn starch. Mix.Place in simmering juices and thicken.
