Tuna Noodle Casserole Recipe

2 tbsp. chopped onion
1 tbsp. olive oil
2 cups small pasta (egg noodles, macaroni, etc)
2 cans drained tuna
1 can mushroom soup

Optional: 2 cups cooked mixed vegetables, peas, etc.
topping: crushed potato chips, tacos or cereal to cover

Preheat oven to 350 F.
Boil the pasta.
Meanwhile, stir fry the onion in olive oil.
Mix pasta, onion, tuna, mushroom soup, and vegetables in a casserole dish. Top with crushed chips.
Bake uncovered for 30 min.
