4 1/2 to 5 1/4 cups all-purpose flour, plus more for covering surface
1 package active dry yeast
1 cup milk
1/2 cup sugar
1/2 cup shortening plus more to grease bowl
2 teaspoons salt
3 eggs

Directions:
In large mixing bowl, combine 2½ cups all-purpose flour and 1 package active dry yeast. Heat 1 cup milk, ½ cup sugar, ½ cup shortening and 2 teaspoons salt just till warm (115 – 120 degrees), stirring constantly till shortening almost melts. Add to dry mixture; add 3 eggs. Beat at low speed of electric mixer for ½ minute, scraping bowl. Beat 3 minutes at high speed. By hand, stir in 2 to 2 ¼ cups all-purpose flour to make a soft dough. Knead on lightly floured surface till smooth and elastic, 5 to 8 minutes. Shape in a ball.

Place in greased bowl; turn once. Cover; let rise in warm place till double, about 2 ¼ hours. Punch down; divide in thirds. Cover; let rest 10 minutes. On floured surface, roll each to a 12 inch circle. Shape into Butterhorns (described below). Arrange, point down, on greased baking sheets. Brush with melted butter. Cover; let rise till very light about 1 hour. Bake at 400 degrees for 10 to 12 minutes.

Shaping Butterhorns: Roll dough to a 12-inch circle. Brush with melted butter. Cut into 12 wedges. Begin at wide end of wedge and roll toward point. Place, point down, on greased baking sheet.
