1 small onion
1 celery rib, diced
1 t vegetable oil
1 (32-ounce) container low-sodium chicken broth
1 (20-ounce) pkg frozen macaroni and cheese (Stouffer's Macaroni and Cheese)
1 (16-ounce) package pasteurized prepared cheese product, cubed
1 (10 3/4-ounce) can cream chicken soup
2 c chopped cooked chicken

Directions:
Saute' onion and celery in hot oil in a large Dutch oven over medium-high heat 5 minutes or until vegetables are tender. Stir in chicken broth and remaining ingredients. Bring to a boil, stirring occasionally. Reduce heat to low, and simmer, stirring occasionally, 20 minutes or until cheese is melted and mixture is blended and thoroughly heated.
