Cauliflower Soup Recipe

1 3/4 lbs. cauliflower
5 c. chicken broth
2 T. lemon juice
2 T. butter
1 c. chopped leeks
1/2 c, chopped celery
1/2 c. light cream
salt & pepper to taste
fresh chive for garnish

Remove core from cauliflower and discard. Cut into florets and stems into pieces.

To a pot of boiling water add lemon juice and cauliflower. Cook until barely tender, about 3 minutes. Drain and run under cold water.

Place butter in a frying pan; add leeks and celery. Stir to wilt, about 2 minutes. Add cauliflower and chicken broth. Bring to boil. Partially cover, turn down to simmer 15 minutes. Reserve some florets.

Puree soup but leave a small amount chunky. Return to stove, add cream and florets. Season with salt and pepper. Garnish with fresh chive.
