1-1/2 lbs Roma tomatoes (seeded & chopped)
1/3 cup fresh basil leaves, chopped
1 Tbsp olive oil
1 Tbsp chopped garlic
1 Tbsp chopped fresh oregano
1 Tbsp balsamic vinegar
1 tsp. fresh lemon juice

Italian Bread, Sliced
Olive Oil
Mozzarella Cheese

Directions:

Mix first 7 ingredients in bowl. Season with salt and pepper as desired.

Slice bread 1/2 to 3/4 inch thick. Brush with a little olive oil, sprinkle with garlic powder, and toast. Spread with bruschetta and top with a couple of slivers of mozzarella cheese.
