4 eggs
2 cups sugar
1 cups oil
2 teaspoons vanilla
4 small jars baby food carrots
2 cups chopped nuts
2 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon salt

Mix eggs, sugar, and oil; beat well. Add baby food carrots and vanilla. Mix dry ingredients together and add to first mixture. Add chopped nuts. Pour into greased and floured jellyroll pan or cookie sheet with deep sides. Bake at 350 degrees for 35 minutes or until done.

Cream Cheese Frosting:
Mix one cube softened margarine and 8 oz. package softened cream cheese. Slowly mix in a box of powdered sugar (a little less if you prefer). Add 1 teaspoon vanilla and add a tiny bit of milk to thin, if needed. Spread on cooled cake.
