Lobster Newburg or Shrimp Newburg


1 C Butter or margarine
1 T Flour
1 lb. Lobster or shrimp
t Salt
C Sherry or dry white wine
2 egg yolks, slightly beaten
1 C Light cream or milk


1. In top of double boiler, melt butter. Stir in flour, allow to bubble 1 minute.
2. Add lobster or shrimp, salt, paprika and sherry.
3. Combine egg yolks and cream. Warm the cream in microwave first, then add yolks. It is quicker to warm the cream in the double boiler with the rest of ingredients. Note: If you add the cold cream to the warm mixture, be sure to do it very gradually or it may curdle.
4. Cook over very low heat until thickened. Stir frequently.
5. Serve over rice or toast points.
