Make a roux with 3/4 cups of flour and 3/4 cups of oil. Add 1 lb. beef pieces and brown
1-2 tbsp. Creole seasoning
1 cup chopped onion
1 cup chopped celery
1/4 lb. cubed new potatoes
1/4 lb. small carrots
1 cup squash, zucchini, peas, cherry tomatoes and corn, etc.
1 tbsp. garlic
2 bay leaves
1 cup red wine
5 cups water
Salt and pepper to taste

Cook 40 minutes in Dutch oven or heavy pan until meat is tender
Serve over rice.
