2 c sugar
1 c canola oil
4 large eggs
2 c flour
2 tsp soda
2 tsp cinnamon
1/2 tsp ginger
1 tsp baking powder
1/2 tsp salt
2 c canned pumpkin
Cream cheese frosting:
1/4 c butter
1 pkg (8 oz) cream cheese softened
1 lb powdered sugar
2 tsp vanilla

For Cake: Combine sugar, oil, and eggs in a large mixing bowl; mix well. Mix dry ingredients in separate bowl. Stir into oil mixture beating well. Stir in pumpkin. Pour batter into greased and floured 9x13 pan or 2 , 9 inch round cake pans. Bake at 350 ( 9x13 25-30 mins) (round pans 35-40)
For Frosting: Combine all ingredients in large mixing bowl; beat until smooth. Makes enough for 2 layer cake or 2 9x13 cakes.
