3 cups cooked rice (white or brown)
1 red bell pepper, seeded and diced
1 orange bell pepper, seeded and diced
1 green bell pepper, seeded and diced
1 tomato, diced
1 can (6 ounces) white albacore tuna, drained
1 can (15 ounces) chickpeas, drained
1 cup frozen peas, thawed
1 clove garlic, peeled and minced
1/3 cup chopped fresh parsley
1/2 cup vinaigrette, any flavor

In large bowl, combine rice, bell peppers, tomato, tuna, chickpeas, thawed peas, garlic, parsley and dressing. Toss to mix. Cover and store in refrigerator until ready to serve.

I make a double batch of this for sure. With some raspberry vinaigrette. I love the brown rice also. Walnuts might be a great addition too.
