Ingredients: 4 large green tomatoes, cored and sliced 1/4 in. thick 1/2 c. all purpose flour 1/2c. yellow cornmeal 2 T. sugar 1 tsp. sea salt or to taste 1/2 tsp. black pepper or to taste 1/4 tsp. cayenne pepper 1 large egg 1/2 c. buttermilk

Directions:Preheat oven to 200º. Line a baking sheet with paper towels. In a small bowl, whisk together egg and buttermilk. Pour enough canola oil in a large skillet to fill to 1/4 in. deep; heat to about 375º or until oil sizzles when you drop a small amount of flour into skillet. Dip a green tomato slice in egg-buttermilk and coat both sides; dredge in flour mix on both sides; carefully place in hot oil. Repeat with enough slices to fill skillet but not crowd. Fry until the undersides are golden brown, about 2 minutes. turn and fry other side. Use tongs or slotted spatula to transfer sliced to baking sheet to drain; place in oven while you fry the remaining tomatoes.

Notes: I like my tomatoes with remoulade sauce or ranch dressing blended with roasted red peppers and dash of cayenne. yum!
Caprese Salad twist: Layer your fried green tomatoes with fresh mozzarella slices, basil leaves and fresh beefsteak tomatoes, salt and pepper and drizzle with your favorite Balsamic Vinaigrette or a Balsamic bread-dipping sauce. (My favorite is Signolia's, Waxhaw, NC,ph.# 866-363-2142 :) )
Add toasted French bread slices to create heavy appetizers or small sandwiches.
