7 med. potatoes
1 1/2 tsp. salt
1 med. onion, chopped
1 qt, milk
3 tbsp. butter
3 tbsp. flour
3 ribs celery, chopped
2 c. chicken broth
1 tsp. pepper
1/8 tsp. cayenne pepper
chopped parsley

Directions:
Directions:
Cover potatoes with water; add salt and boil until soft. Drain potatoes (reserving one) and put through ricer to make 2 1/2 cups. Scald milk with chopped onion. Add butter, flour, celery, chicken broth, both peppers, and parsley. Heat soup to boiling point and boil 1 minute. Reduce heat, and simmer for 1 hour. Cube reserved potato into small cubes. Add to soup the last 15 minutes.
