2 1/2 c. Self Rising Flour
1 c. Buttermilk
1 1/2 c. Vegetable Oil
1 tsp. Baking Soda
1 tsp. Vanilla
1 1/2 c. Sugar
1 tsp. Cocoa
1 tsp. White Vinegar
1 bottle Red Food Coloring
2 Eggs
1 1/3 stick Butter
10 oz. Cream Cheese
1 lb. Powdered Sugar
1/2 cup Pecan Chips

Pre-heat oven to 350. Mix all of the above ingredients into a batter. Spray 3 (9") round pans. Pour batter into pans and bake for 20 minutes. Cool. FROSTING: Combine Butter, Cream Cheese and Powdered Confectioners Sugar in a bowl. Beat until fluffy. Then fold in Pecan Chips. Frost cake. Sprinkle a few Pecans on top to decorate. Refrigerate for 1 hour before serving.
