5 baby eggplants (about 1 lb)

SPICES GROWN

2 t. coriander

1 t. cumin

1 t salt

1/2 t red pepper

1/4 t turmeric

1 onion

1/2 c tomato sauce

juice of 1/2 lime

1 t grated ginerroot

2 cloves garlic

1/2 c chopped cilantro
----------------------------------------------------------
1 t Clarified Butter

1 t cumin seed

1 t Garam Masaala

1 large lime, cut in wedges

Tandoori Bread or Puffy Whole Wheat Bread

1. Grill, bake or boil eggplant then peel and mash pulp, food processor

2. Add together all ingredients in the first section

3. Brown cumin and then onion

4. Add eggplant mixture, add some water if needed and stir-fry 15 minutes or until ready

5. Stir in Garam Masaala
