1 onion chopped
1 tsp. minced garlic
1 tbsp oil
4 c. diced, cooked chicken
2 cans great northern beans
1 can garbanzo beans
1 can white corn
2 can (15-16 oz) chicken broth
2 can chopped green chilies
1 tsp ground cumin
1 1/2 tsp oregano
1/4 tsp cayenne pepper
3 cups Monterey Jack cheese

Directions:
Directions:
In large Dutch oven saute onions and garlic in oil until tender. Add chicken, beans, chilies, corn, chicken broth and spices. Mix thoroughly and bring to a boil, reduce heat and simmer for 1 hour. Stir in 1 1/2 cup of cheese. Serve warm and sprinkle with remaining cheese in individual bowls.
