8 ounces egg noodles
2 tablespoons oil
2 stalks celery, thinly sliced
1 medium onion, thinly sliced
2 carrots, thinly sliced, rounds
2- 10 3/4 ounce cans chicken broth
2 soup cans of water
1- 14 ounce can tomatoes
2 cups cooked chicken
2 tablespoons chopped parsley
1/4 teaspoon ground thyme
salt and pepper

In a large saucepan, heat oil and add celery, onion, and carrots. Saute over medium heat, stirring occasionally until veggies are tender-crisp. Add chicken broth, water, and tomatoes and simmer for 20 minutes until carrots are tender. Increase heat slightly and stir in pasta. Cook for 6 minutes until pasta is tender, stirring occasionally. Add chicken, heat through and season with parsley, thyme, salt, and pepper, and serve.
