4 c. shredded potatoes
1 3 oz package cream cheese softened
2 large eggs
2 T flour
1/2 c. diced Swiss cheese
2 T. grated onion
1/2 tsp salt
1/8 tsp pepper
dash red pepper
3 T. butter
3 T. salad oil

Drain potatoes in colander. set aside. In medium bowl beat cream cheese until fluffy. Add eggs one at a time, beating well after each addition. Add four and beat until combine. Stir in potatoes, cheese, onion salt and peppers. Heat butter and oil in a large skillet. Use 1/4 cup batter for each, pour in and flatten slightly. Cook about 5 minutes, turn and cook other side. drain on paper towel. Makes 10 pancakes.
