1/2 C. shortening
2/3 C. sugar
1 egg
1/2 t. salt
3 T. old-fashioned oats
1 C. all-purpose flour

1/2 C. peanut butter
3/4 C. powdered sugar
1 T. fine graham cracker crumbs

Preheat oven to 325 degrees. In a large bowl, cream together shortening and sugar with an electric mixer. Add the egg, salt and peanut butter and beat until well blended. Put oats in a blender and blend on medium speed until ground to a flour consistency. Add oats and flour to the mixture and blend well. Pinch out small portions of dough and roll into 1-inch balls in your hand. Press flat on an ungreased cookie sheet so that they form 2-inch circles. Bake for 8-10 minutes or until light brown around the edges. While cookies bake, combine filling ingredients in a small bowl. When the cookies are cool, use a butter knife to spread a thin layer of filling on the flat side of the cookie and press another cookie on top. Makes 2 dozen.
