Mexican Cornbread Casserole
From the Kitchen of Momma Cornett

1 cups self-rising corn meal
tsp baking soda
cup oil
2 eggs
1 cup milk
1 can cream style corn
1 medium onion chopped fine
2-3 jalapeno peppers (seeded and chopped)
1lb ground beef (browned & drained)
Salt to taste
lb grated cheddar cheese

Mix first 6 ingredients together adding corn last. Then stir beef, peppers, and onion into batter. Salt to taste. Stir in cheese. Grease and corn meal sides of 9x13 baking dish. Pour batter into dish and bake at 350 degrees until brown, usually about 40 minutes.
