Whole roasting chicken
1 cup wild rice
1/2 cup celery
1/2 cup onion
1 cup chopped mushroom
Parmesan cheese

Prepare w cups of rice by cooking it in chicken broth. Chop celery, onion, and mushrooms. Saute in butter until tender. Mix vegetables, sage, salt, and pepper. Place in a baking pan, cover, and bake.

Salt inside of chicken and stuff with celery, 1/2 chopped onion, 1/2 lemon. Rub chicken on the outside with lemon. Sprinkle with sage, paprika, pepper, salt, rosemary. Cover and bake for 30 minutes. Baste with juices, uncovered and finish baking.

Mushroom sauce: Saute mushrooms, onions, garlic in butter and add flour until thick. Add 1/2 cup milk and add remaining chicken broth until a nice gravy develops. Add 1/4 cup Parmesan cheese.
