Ruby's Banana Pudding Recipe

1 1/2 cups sugar
3 cups milk
3 egg yolks
1/2 stick butter
1 TBLS vanilla extract
2 TBLS corn starch
1 box Vanilla wafers
3-5 Bananas, sliced

3 egg whites
1/4 cup sugar
pinch salt

Combine sugar and corn starch. Beat egg yolks, add milk sugar with corn starch. Cook over medium heat stirring constantly until thickens and smooth.

Add vanilla and a drop or two of food coloring and butter. Let cool. Line bottom of glass baking dish with vanilla wafers. Add a layer of sliced bananas.
Spoon a layer of pudding over wafers and bananas. Repeat layers. After using all the pudding, end with a layer of vanilla wafers.

Meringue Topping
Make topping from egg whites. Beat egg whites until stiff. Add 3 tablespoons sugar. Beat again. Add 1 teaspoon vanilla; beat again.

Add topping to pudding and bake in 350 degree oven until topping lightly browns.
