3/4 c butter or margarine
1/2 c sugar
3 eggs
grated rind of 1 lemon
3 med apples, pared and cored
1 1/2 c sifted flour
1/4 tsp salt
1 1/2 tsp baking powder

Preheat oven to 375 degrees. Grease a 8" x 8" x 2" pan.
In a large bowl, with electric mixer at medium speed, beat butter and sugar until creamy. Then beat in eggs, one at a time. Stir in lemon rind and diced apples.
Sift together flour, salt, and baking powder. Fold into butter mixture until well blended.
Pour into pan. Bake about 30 minutes or until golden and cake tester comes out clean.
