1 cup (125g) crushed plain sweet biscuits
90g butter melted
250g packet cream cheese, softened
400g can sweetened condensed milk
3 tsp grated lemon rind
1 tbsp gelatine
1/4 cup lemon juice
1/4 cup water
300ml cream

1. Combine biscuit crumbs and butter in bowl, mix well. Press crumbs evenly over base of 20cm springform cheesecake tin. Refrigerate 30 mins.
2. Beat cream cheese in small bowl with electric mixer until thick and creamy, add condensed milk and rind, mix well. Sprinkle gelatine over combined lemon juice and water, microwave on high for 1 min. Allow to cool. Stir gelatine mixture and cream into cream cheese mixture and blend well.
3. Pour filling over base, refrigerate several hours or until set. Decorate with whipped cream and shredded lemon rind, if desired.
