1 tbsp Olive Oil
1 onion, chopped
3 medium potatoes, peeled, boiled and mashed
210g can pink salmon / tuna drained
2 tbsp milk
2 spring onion, chopped (optional)
1 cup bread crumbs
10g butter

1. Heat half the oil in frying pan and cook onion until soft. Cool slightly.
2. Combine onion, potato, salmon, milk and spring onion.
3. When mixture is cold, divide into 6 patties or 12 mini patties for kids. Roll in breadcrumbs and rest for 30 mins, covered in fridge,
4. Heat butter and remaining oil in non-stick frying pan and cook patties until golden.
