1 lb chicken, beef or pork
1 green pepper (chopped)
1 onion (chopped) (optional)
8 white mushrooms (sliced)
1 tsp hot (or regular) curry powder
1 tsp cinnamon
1/2 tsp powdered ginger
1 tsp black pepper
1 tbsp hot chili paste
1 small can tomato sauce
1 can coconut milk
Handful of frozen beans
Salt to taste
Rice of choice

In a large skillet brown the meat, remove meat once completed. Add the green pepper, onion, mushrooms, cinnamon, ginger, black pepper and hot chili paste. When vegetables are nicely softened and browned, add tomato sauce and coconut milk. Bring to a boil, add the meat again, and turn temperature down to a simmer. Cover, stirring occasionally, for 20 to 30 minutes. Just before serving add the frozen beans and cook through. Add salt to taste throughout the cooking process. Serve over rice of your choice.

The 1 tbsp hot chili paste is a guideline, this can be increased if desired, but be careful!
