1/2 c. carrot
1/2 c. celery
1/2 c. onion
1 c. mushrooms
1 tbsp. parsley
1 t. margarine
2 lb. Sole or Flounder
2 tbsp. mayonnaise
2 tbsp. parmesan grated cheese
1 t. dijon mustard (or more)

Dice and saute in 1 t. margarine the carrot, celery, onion, mushroom and parsley . Cook 5 min.Stuff and roll fish, secure with toothpick.

Mix mayonnaise, parmesan grated cheese and dijon mustard for topping.

Place rolled pieces of fish in glass baking dish.
Spread topping on fish.

Bake at 400degrees for 10 minutes.
