1 medium onion
2 cloves garlic, minced (or ¼ tsp garlic powder)
2 tbsp olive oil
1 teaspoon dry basil
½ tsp oregano
1 tbsp parsley
2 (14 ½ oz each) cans chicken broth
2 cans white kidney beans, drained (can use Great Northern Beans instead)
1 package frozen chopped spinach
¾ lb diced ham (optional)

Directions:
Directions:
Sauté onion, garlic, basil, and parsley in oil in the soup pot until onion is translucent. Add chicken broth and beans and simmer for 30 minutes. Add spinach and ham and heat until spinach is thawed and tender.
