1 ½ lbs feta cheese
1 package filo pastry sheets (in the freezer section at the store)
1 ½ to 2 lbs spinach, snipped and cleaned ( can use equivalent of frozen spinach)
Melted butter

Preheat oven to 350 degrees

In a large frying pan, heat some cooking spray and cook spinach at medium heat. Be sure to drain any excess water and squeeze as much out at possible. If using frozen spinach, it is easier to cook in the microwave, drain and squeeze out excess moisture.

Beat eggs until frothy in large bowl. Crumble feta cheese and the spinach into the eggs and mix thoroughly.

Butter a 9x11 inch pan. Place 1 sheet of filo bread and brush with melted butter. Keep unused filo covered as you work so it doesn't dry out. Add 3 more filo sheets, buttering each sheet before adding the next one. Pour egg mixture into the pan. Cover with 4 more sheets of filo, brushing each sheet with butter as added.

Bake for 40 to 45 minutes or until golden brown. If serving as an appetizer, cut into small squares, If serving as a side dish, cut larger portions.
