Beef Stroganoff Recipe

1 1/2 lb. beef tenderloin
3 T. butter
2 T. flour
2 c. beef consomme
2 T. dijon mustard
1/2 c. sour cream
1/2 onion, chopped
1 lb. egg noodles
Parsley, for top

Put beef tenderloin in a crockpot all day (you can just do this in a pan for a few minutes but the crockpot makes the beef very tender). Cook onion & meat in a saucepan with 1 T. butter.

In a seperate pan, melt 2 T. butter & add flour. Cook for 1 minute. Whisk in consomme. Stir in sour cream & mustard. Thicken 1-3 minutes. Season with salt & pepper.

Add all ingredients together and pour over noodles. Add parsley to the top & serve.
