Warm Potato Salad Recipe

1 kg of small new potatoes halved
250g cherry tomatoes halved
50g of rocket or baby spinach leaves

2 cups basil leaves
2 cloves garlic chopped
2/3 cup of olive oil
1 tbsp of white wine vinegar
1 tbsp of Dijon mustard

Cook potatoes in a large pot of boiling water for 5-10mins or until tender. Drain well and cool slightly.

To make dressing finely chop the basil and garlic in a food processor with the motor running add the combined oil, vinegar and mustard. The mixture should be smooth with the leaves finely chopped.

Place potatoes in a large bowl and add the tomatoes and rocket or spinach. Then add dressing and toss to combine. Serve.
