1 small onion, chopped
2-3 garlic cloves, chopped
1 Tbsp. olive oil
1 cup uncooked long grain rice
2 cups chicken broth or water
1 Tbsp. salt
1/4 tsp. pepper
1 (4.5 oz) can chopped green chilies
3 Tbsp. tomato paste
1/4 cup fresh parsley, chopped

Saute onion and garlic in hot oil in a large saucepan over medium-high heat 3 minutes or until onion is tender. Stir in rice and chicken broth or water and salt and pepper; bring to a boil. Cover, reduce heat, and cook 20 minutes.
Remove from heat; stir in green chilies, tomato paste and parsley.
