1 egg
1/2 c. buttermilk
1/4 c. vegetable oil
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla

Directions:
Directions:
Beat egg slightly. Stir in buttermilk and oil. Mix dry ingredients together and stir in just until flour is moistened. Batter should be lumpy. Do not over mix. (See options below). Fill greased muffin cups 2/3 full. Bake 20-25 minutes at 400 degrees or until golden brown on top. Loosen immediately with spatula and cool on cookie rack.
*Options
Elderberry - add 1 cup elderberry to batter
Cinnamon Ripple - mix 1/2 cup brown sugar, 4 tbsp. butter, 1/4 cup flour, 2 tsps. cinnamon. Sprinkle cinnamon ripple over the batter and use a spatula to fold it in a couple of times.
Apple - add chopped apples with a little cinnamon.
