Sweet Potato Crunch Recipe

3 large sweet potatoes
4 tbsp butter
2 eggs
1/3 cup evaporated milk
1 tsp vanilla
1/2 cup sugar

**** Topping ****
1/3 cup butter, melted and cooled
1 cup brown sugar (light)
1/2 cup flour
1 cup chopped pecans

Bake sweet potatoes at 350 until tender, approx. 45 minutes - 1 hour. Remove outer skins and mash potatoes. Mix mashed potatoes with butter, eggs, milk, vanilla and sugar. Spread in baking dish.

For the topping, mix butter, brown sugar, flour and pecans. Spread over potatoes. Bake at 350 until hot.
