Cook together:
2 cups water
2 cups cubed potatoes
1/2 cup cubed or sliced carrots
1/2 cup chopped celery
1/4 cup chopped onion
1 tsp. salt
1/4 tsp. pepper

White sauce:
1/4 cup butter (1/2 stick)
1/4 cup flour
2 cups milk

2 cups shredded sharp cheddar cheese
1 1/2 cups cubed ham
1-2 cups corn (optional)

Bring first seven ingredients to a boil and cook on medium for 8-10 minutes.
In separate pan, melt butter, add 1/4 cup flour and whisk together off the heat. Add 2 cups milk gradually, and cook on medium heat, stirring until it comes to a boil. Add the cheddar cheese. Stir until melted. Add to first pan with ham and corn. Heat through. Makes 4-6 generous servings.
