1 white onion chopped
2 ribs celery sliced
½ c olive oil
15 oz. can diced tomatoes
4 oz. chopped chili peppers
2 T. chopped fresh cilantro
½ tsp. seasoned salt
½ tsp. cayenne pepper
2 cloves garlic minced
2 ½ lbs. shrimp lightly cooked
½ lb feta cheese
¼ c vodka
Hot cooked rice

Directions:
Directions:
In sauce pan sauté onions and celery in oil until transparent. Add tomatoes, green chilies, cilantro, salt pepper and garlic. Cover and simmer 45 minutes.

Add shrimp and spoon into buttered 3 qt. baking dish. Crumble cheese over shrimp.

Bake uncovered at 350 for 10 -15 min. Remove from oven. When ready to serve, pour heated vodka over shrimp and flame. Serve hot over rice.
