2c ) red lentils
2 qts. stock
1 medium onion quartered
1 medium tomato quartered
2 tsp. garlic coarsely chopped
4 T olive oil
1T onion finely chopped
2 tsp cumin
1tsp salt
black pepper
Lemon cut into wedges

Directions:
Directions:
Wash lentils. In a 4-5 qt pot bring stock to boil over high heat. Add lentils, onion, tomato and garlic. Reduce heat to low and simmer partially covered for 45 minutes or until lentils are soft.
In a small skillet heat 1T (15ml) oil over moderate heat. Add chopped onions and cook until deeply browned. Set aside.
Puree soup or force through sieve (optional) Return to heat and add cumin, salt and pepper. Before serving add in 3 T. olive oil. Sprinkle with browned onions and serve with lemon wedge on the side.

I don't bother with the sieve step and I leave out the added oil to lessen calories.
