4 6" corn tortillas
2 tsp. olive oil

2 (14.5oz) can chicken broth
2 C. water
3/4 C. canned Mexican-style stewed tomatoes with juice
1 bay leaf
1 garlic clove, pressed
1/4 tsp. cumin, ground
1/8 tsp. crushed red pepper, dried
12 oz. skinless, boneless chicken breast, cut into thin strips
2 green onions, sliced
1/4 C. fresh cilantro, chopped
2 Tbsp. fresh lime juice
sour cream

Brush 1 side of tortillas with oil, cut in half. stack halves and cut crosswise into 1/4" wide strips. Spread strips on non-stick baking sheet. Bake at 350 until golden brown. cool.

Combine broth, water, tomatoes, bay leaf, garlic, cumin, and red pepper in saucepan; bring to a boil. Add chicken; simmer until just cooked through, about 5 minutes. Stir in green onions, cilantro, and lime juice. Season with salt & pepper.
Ladle soup into bowls and sprinkle with tortilla strips, avocado and a dopple of sour cream just before serving.
