4 c. apples, diced (I don't peel them)
2 c. sugar
2/3 c. vegetable oil
2 tsp. vanilla
2 eggs
2 1/2 c. white or whole wheat flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 c. chopped nuts (optional)
1 c. raisins (optional)

2 c. powdered sugar
1/2 c. softened butter/margarine
4 oz. softened cream cheese
1 tsp. vanilla

Mix apples, sugar, oil, vanilla, and eggs. Stir together dry ingredients and add to apple mixture. Pour into greased 9x13 inch pan. Bake at 350 for about 1 hour, until toothpick comes out clean.

For frosting, beat ingredients well and spread on cooled cake.
