1/2 C butter, room temp
1/2 C brown sugar, packed
1/2 C sugar
1 egg
1-1/2 tsp grated lemon rind
1-1/2 T molasses
1/2 tsp vanilla

1 C flour
1/2 tsp soda
1/2 tsp salt
1-1/2 C rolled oats

Mix together butter, sugar, egg, lemon, molasses and vanilla. Add together flour, soda, salt and oats.

Roll in wax paper. Chill for several hours. Remove wax paper and slice in 1/8" slices. Place on cookie sheet.

Bake 8-10 mins at 400
