1/2 cup coconut milk
1/4 cup thinly sliced fresh ginger
2 Tbsp lemon juice
1 Tbsp sugar
2 tsp red curry powder
2 cups chicken broth (or 1 can)
2 lbs mussels, scrubbed & debearded
1/4 cup fresh basil, chopped

Directions:
Directions:
Put everything but the mussels and basil into a large pot. Bring to a boil. Add the mussels, cover and cook for 5 minutes, or until the mussels open.
Remove from heat and discard any unopened mussels. Divide mussels and broth evenly into 2 bowls. Garnish with chopped basil.
