3 oranges ( about 1 lb.)
1/4 cup chopped fresh parsley, divided
2 Tbsp olive oil, divided
4 Tilapia filets ( about 6 oz each)
2 cups hot, cooked brown rice
salt & pepper

Directions:
Directions:
Grate 2 tsp orange rind. Peel and section the oranges over a bowl, reserving 2 Tbsp of the juice.
Chop the orange sections and combine with the rind, 2 Tbsp of the parsley, 5 tsp of the oil and salt & pepper to taste. Toss well. Set aside. Pre-heat oven to 400º.
Sprinkle fish filets with salt & pepper, and place in an oven-proof skillet, coated with oil. Bake for 10 to 15 minutes, untill fish flakes easily when tested with a fork.
Combine the 2 Tbsp of orange juice with the 2 remaining Tbsp of parsley. Add salt & pepper to taste, and stir into the cooked rice.
To serve; spoon 1/2 cup rice onto each plate. Top with fish filet and 1/4 cup of the orange salsa.
