1 pound ground beef
1 egg
1 Tbs cornstarch
1/2 tsp salt
Black pepper to taste
1/4 tsp nutmeg
1/2 tsp seasoned salt
2 Tbs oil
1 cup pineapple juice
1 Tbs soy sauce
2 Tbs vinegar
6 Tbs water
3 Tbs cornstarch
1/2 cup sugar
4 slices pineapple, cut in pieces
2 green peppers, cut in lengthwise strips
1 large carrot, sliced thin

Meatballs: Mix together ground beef, egg, cornstarch, salt, onion, black pepper, nutmeg and seasoned salt. Form into 1 inch meatballs (18-20) and brown in 1 tablespoon oil. Remove and set aside.
Sauce: Mix pineapple juice with the other tablespoon of oil, the soy sauce, vinegar and water. Combine cornstarch and sugar in skillet or saucepan. Slowly stir the liquid into the cornstarch mixture. Cook until thickened, stirring constantly. Stir in the vegetables and cook for about 5 minutes, stirring often. Add meatballs and pineapple pieces. Heat thoroughly. Serve over rice. Serves 4
