4 lbs fresh greens (collard, mustard, turnip or kale)
5 strips of bacon
1 smoked ham hock
1 large onion, chopped
5 c water
salt and pepper to taste

1. Wash greens well.
2. Remove any brown spots or blemishes.
3. Cut away the thick stems and tear or cut the leaves into pieces. (Folding the greens in half & pulling the stem out is easiest).
4. Cook the bacon over low - medium heat in the stock pot until it is translucent and the bottom of the pot is coated with rendered bacon fat.
5. Add the chopped onions, greens, the ham hock and the water.
6. Bring to a boil then cook over low heat until the greens are tender.
7. Add salt and pepper to taste.
