Maine Crabcakes Chesapeake Style Recipe

3/4 c mayonnaise
3 eggs
4 slices fresh white bread processed to medium fine crumbs
2 T Old Bay Seasoning
1 T dry mustard
1 T chopped fresh chives
1 tsp dry oregano (or 1 T fresh, chopped)
1 tsp dry basil (or 1 T fresh, chopped)
1/2 medium red pepper
1/2 medium Spanish onion, diced small
1 lb Crabmeat

Sauce for Crabcakes:
1 T flour
1T butter
1 c heavy cream
1 T Old Bay Seasoning
2 dashes Tabasco

Mix first 8 ingredient together until well blended.
Saute pepper and onion in a little butter until soft.
Add to mayonnaise mixture.
Gently fold in crabmeat.
Shape into 2" patties.
Saute in butter at med high heat to brown both sides.

Sauce for Crabcakes:
Melt butter in medium saucepan. Add flour and stir. Add rest of ingredients. Coke over medium heat, stirring until mixture thickens.

Yields 6-8 2" Crabcakes - This recipe the signature dish of The Barrows House Bed and Breakfast in Vermont. It's wonderful. I'm so happy they shared the recipe.
