Cheesy Broccoli Soup Recipe

2 potatoes, peeled and shredded
3 c. water
2 carrots, peeled and shredded
1/2 c. flour
1 small onion, chopped fine
1/2 c. margerine or butter
2 c. broccoli, washed and cut up
1/2 tsp. salt
1 tsp. salt
4 c. milk
4 tsp. granulated chicken boullion (or 4 cubes)
6 oz. sliced velvetta cheese

Place 1st 7 ingredients in large kettle, cook until tender. Make white sauce in another pan by melting the margarine, then stir flour into melted margarine. Add salt and 4 c. milk. Slowly add white sauce to broccoli mixture. Heat through, but NOT to boil. Add cheese and stir until melted.
VARIATION: Can use cauliflower or chunks of potato instead of broccoli.
