2 1/2 cups all-purpose flour
1 cup sugar
2 1/2 tsp baking powder
1/4 tsp salt
1 cup buttermilk
2 eggs, well beaten
1/2 cup butter, melted
1 1/2 cups fresh blueberries (frozen also work well; don't thaw)

Grease muffin pans or line with paper cases.

Combine flour, sugar, baking powder and salt in large bowl. Make a well in centre of dry ingredients and pour in buttermilk, eggs and melted butter. Stir just until ingredients are combined. Lightly fold in blueberries. Fill muffin pans with the mixture.

Bake at 400º F for about 25 minutes. Muffins should be pale golden brown on top. Leave to cool in pan a few minutes before turning out on to wire rack as these muffins are quite tender. Makes 12 muffins.
