1 medium-sized onion, finely-minced
2 T olive oil
1 clove garlic, finely chopped
1/2 c red cooking wine
1 T sugar
1 T basil
1 T oregano
1/2 T marjoram
5-6 hot Italian sausages
2 6oz cans tomato paste
2 15oz cans tomato sauce

Brown the sausages on medium-high heat in the olive oil. Add the onions to the pan and cook until they're translucent. Add the garlic and cook for another minute or two. Remove from heat and transfer to a sauce pan. Add all the other ingredients and simmer on low heat for at least 1 hour (2 is even better).

Who needs canned spaghetti sauce?! Serve with any kind of pasta and fresh, grated Parmesan cheese. This stuff is killer if you refrigerate it after cooking and reheat it.
