Oatmeal Cake Recipe

1 c. oatmeal
1/2 c. butter
1 1/4 c. boiling water
1 c. white sugar
1 c. brown sugar
2 eggs
1 1/3 - 1 1/2 c. flour
1/4 - 1 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
1/4 - 1/2 tsp. nutmeg (optional)


4-6 T. butter
1/4 c. milk or cream
1/2 c. white or brown sugar
1/2-1 c. nuts
1 c. coconut
1/2 tsp. vanilla

Cake: Mix oatmeal, butter and boiling water. Let stand 20 min. Stir sugars and eggs into oatmeal mixture. Mix in sifted dry ingredients. Bake in a 9x13" pan for 30-40 min. at 350.
Topping: Mix all topping ingredients together. Spread on cake and brown under broiler for 5 min.
