Charles Cory

3/4 cup minced onion
3/4 cup minced green onions
1/2 cup minced celery
1/2 cup minced carrot
1/4 cup minced bell pepper
2 tsp minced garlic
3 T butter
1 tsp salt
1/4 tsp cayenne pepper
1 tsp black pepper
1/2 tsp white pepper
1/2 tsp cumin
1/2 tsp nutmeg
1/2 cup half and half
1/2 cup catsup
1-1/2 lbs lean ground beef
1/2 lb lean ground pork
3 eggs, beaten
3/4 cup dry bread crumbs

Saute onion, bell peppers, celery, carrot, green onions and garlic in butter until vegetables are tender and liquid is absorbed. Cool and reserve. Combine all spices and add to vegetable mixture. Stir in all remaining ingredients. Mix well - hands are your best tools! Form into a loaf and place on a greased baking sheet or in a 9x5 loaf pan. Bake at 350 for 45-50 minutes. Serve with mashed potatoes - yum!
